Japanese omelette curry rice(recipe)


My hubby's favourite dish
Japanese curry rice



I bought Tori karaage and curry paste from NTUC japanese product shelves.

-Cook rice
-Boil potato
-Fry Tori karaage
-Boil water with curry paste, add potato under slow boil
-Cook egg/milk , pour small amount and swift the pan 
-Place rice on plate and slowly place omelette on top on rice
-Serve with tori karaage and curry over the plate

taa daaaa
very easy instant ingredients and tasty!

Egg benedict for dinner

My hubby is egg lover and i thought he will love this dish
He came back really late from work and i was waiting for him till i prepare the hollandise sauce cause the sauce can only stand for the most 1 hr before bacteria start to grow because its raw egg sauce.






it looks really simple but its a hard dish to prepare
you will have to get the right timing of the poached eggs and hollandise sauce can be a disaster.
nevertheless im glad he loved it:)

Red velvet cupcakes

'Feel like baking something today' is the kind of emotion i usually feel on weekends

decided to try baking some red velvets 




i need a good piping tip
just used a daiso $2 piping tip lol

distributed to my colleagues and received alot of compliments
my boss even said ' can sell already '
hahaha so happy!
i loved the taste cus the cream cheese was indeed heavenly
yum yum yum

Errands

Late night friday and decided to go run some errands by myself during the weekend as hubby is forever working.

finally went to print invitation cards and while waiting i went to have mac lunch by myself, i finally pick up some courage to eat alone outside. Weird i know but i'm not used to having to face the crowd myself outside haha!

 cannot contain my excitement when i saw the print outs hee:)
some customers there was asking if they can get one from me lol!

had cooking feel so i whipped up dinner for the hubby :)
tried curry fish


i'm always contented whenever he said ' i feel so xin fu to have such nice homecooked dinner'

Cantonese egg custard tarts

 I got bored at home again during the weekend so i started thinking what to bake and i suddenly remembered my hubby loves egg tarts!

Random attempt again!
 i found recipe online and yields about 14-16 so i divided by 2 cause i just wanted to try out
pardon my doctor handwriting hahaa!

of all the ingredients ,was short of evaporated milk so i googled once again for its substitute and found out that i can just boil fresh milk till its evaporated to halve. woo new knowledge to learn!

I think my egg tart was a sucess just that the crust was too thick so i learnt that i have to thin the dough alittle next time:)

Hokkaido chiffon cupcake

 I'm sorry that i kept spamming baking blog post but because i got hooked into baking recently and i bake whenever i feel like during the weekend:)

I haven't try any Hokkaido cupcake before but to my imagination, i think everything taste great with custard so i attempted to bake these cute little chiffon cakes

 Chiffon cake
3 egg yolks
20g sugar 35g corn oil 60g milk 70g cake flour 3 egg whites
25g sugar

Filling
60g dairy whipping cream 10g sugar 1tsp instant custard powder
Icing sugar, for dusting

Method
1. Pre-heat oven to 170C. 

2. Arrange paper liners on baking tray.  
3. Hand whisk egg yolk and sugar till pale in colour. 
 4. Add in corn oil and milk, mix well.  
5. Sift in cake flour, stir to combine.
  6. Beat egg white until foamy, gradually add sugar, and continue beat till soft peak form. 
7. Take 1/3 of egg white and use a hand whisk to mix into egg yolk batter.  
8. Fold in the balance egg white with a spatula till well combine.  
9. Scoop batter into pre-arranged paper liners to about ¾ full.  
10. Bake for 20-25 mins at middle rack.  
11. Beat whipping cream with sugar till firm and stiff (over a bowl of iced water).
  12. Add in custard powder, mix well.  
13. Pipe custard cream into cupcake and dust with icing sugar. 
Refrigerated before consume.
Here we go

This custard powder works like magic, immediately turned whipped cream to custard with just one tablespoon

raised and cracked

sunken after few minutes of cooling but no worries cause it will still look pretty after piping in the custard

piped custard in and sprinkled with icing sugar




 sent them to fridge for awhile

S'mores Brownie

 I always wanted to try S'mores
but i think its quite a hassle to get those graham biscuits
seemed like you can only get them at Tanglin mall or Holland V

I attempted to bake S'mores Brownie

If anyone is wondering what S'mores is
here you go:

A s'more (sometimes spelled smore) is a traditional nighttime campfire treat popular in the United States and Canada consisting of a roasted marshmallow and a layer of chocolate sandwiched between two pieces of graham cracker

BROWNIE:
8 Tablespoons (1 stick) unsalted butter
4 ounces unsweetened chocolate, chopped
1 cup packed light brown sugar
3/4 cup granulated sugar
1 1/2 teaspoons vanilla extract
1/2 teaspoon salt
4 large eggs
1 cup all-purpose flour
TOPPING:
1 cup semi-sweet chocolate chunks or chips
3 to 4 cups mini marshmallows
 
 
I modified the recipe without adding the crackers because i don't have it haha!
and i used Ferrero rocher as the toppings! yums


saw these photos from Recipe Girl and so tempted!

of course mine doesn't look good but i quite like my version cause its not too sweet heh!
 


i need to get a proper tray for brownies hee

Nasi lemak

One of my favourite local food
i love random attempts



The main lead of the dish
Coconut rice

-simply replace water with coconut milk
-add pandan leaves(knot) for extra fragrance


next up
BEER BATTERED CHICKEN WINGS
 
the proceduers abit hectic due to deep frying
but i loved the end result of the crispness of the wings:)
 
-mix beaten eggs, flour and half can beer
-coat wings with flour then dip into the batter
-deep fry till golden brown
 
 

stir fry eggs and luncheon meat and ta daaaaaaa!



 
 ok, without mil's chilli i think the nasi lemak wouldn't be perfect.

Simple dinner

He strongly insisted that i must cook dinner for him when i called and told him to take away dinner for me.
Even when i told him there is no ingredients left at home and he insisted that i can just cook eggs or whatever will do.

puzzled!
Anyhow, i managed to whip up simple dishes from whatever that is left in the fridge

and im glad that ive made him happy:)
